Sugar is a fine white powder, like cocaine and heroin.  Sure, your coke might be gray, depending on what your supplier cuts it with.  And your dope might be brown or black, and sticky.  Your sugar might be brown, if your supplier hasn’t squeezed all the molasses from it.  But the best stuff, the purest stuff, sugar or cocaine or heroin, is white powder.

They’re all plant products, boiled and purified until they become crystals.   They all have a long history of armed, violent men struggling to control the profits that come from selling them.  But only with the sugar dealers do you think “nations” instead of thinking “drug cartels.”

Maybe because the story of sugar is so much older.  The dealers have been around so long they seem legitimate.  The Mexican cartels might have narcocorridos, but the sugar dealers have their own national anthems.
